EGGS OVER RED RED

(Serves 2)

INGREDIENTS:

  • 4 eggs
  • 2 cups of Red Red sauce
  • 2 small Avocados
  • 1/2 loaf of sour dough bread
  • handful of fresh parsley
  • Sea salt and black pepper to taste
  • 1/8 cup crumbled goat cheese or feta (optional)


DIRECTIONS:

  1. Place  a small/medium size cast iron skillet onto the stove using medium heat
  2. Add Red Red sauce and allow it to heat up...about 5 minutes.
  3. Crack the eggs into the heated Red Red sauce and allow the sauce to poach the eggs  until sunny side up...cook longer if you prefer well done eggs
  4. Remove skillet from stove when done and add sliced avocado and garnish with parsley and cheese.  Season with sea salt and black pepper, if desired
  5. Serve in skillet with warm, sliced sour bread for dipping.  Enjoy!

M.I.L. Notes:

  1. This recipe can be veganized using vegan egg replacements or sliced tempeh or tofu.  Cook these vegan alternatives until well done.
  2. Crumbled goat cheese is optional and can be replaced with a vegan alternative.
