Fig & Caramelized Onion Pizza

(Serves 4-6)

INGREDIENTS:

  • 12 ounces pizza dough, room temperature
  • 1/2  cup Night Sauce
  • 2 tablespoons unsalted butter or Vegan alternative
  • 1 sweet onion, peel removed and thinly sliced
  • 1 tablespoon balsamic vinegar
  • 4 ounces pancetta, small diced or Vegan alternative (optional)
  • 1 tablespoon olive oil
  • 8 figs, thinly sliced into pieces
  • 4 ounces goat cheese, crumbled or Vegan alternative
  • 1 hand full arugula
  • ½ teaspoon granulated garlic
  • Sea salt and pepper to taste


DIRECTIONS:

  1. Preheat oven to 375 degrees and prepare a baking sheet with a non-stick liner.
  2. Spread out dough onto the liner and set aside.
  3. In a medium-sized skillet set over medium heat add butter. 
  4. Once the butter is melted add in the onions and cook until they are soft and translucent, about 5 minutes.  Season onions in skillet with salt, pepper and granulated garlic.
  5. Add the balsamic vinegar and cook for a few more minutes, about 5 minutes. 
  6. Remove the onions from the pan and set aside.
  7. In the same pan add the diced pancetta and cook just for a few minutes to help cook off some of the fat.
  8. Brush the stretched out dough with olive oil. 
  9. Evenly spread 1 cup Night Sauce atop the dough then top with caramelized onions, pancetta, figs, and crumbled goat cheese.
  10. Place pizza in the oven and bake for 15-20 minutes or until the crust is brown and the cheese is melted on the top.
  11. Remove from the oven and top with arugula.  Enjoy!

M.I.L. Notes:

  1. This  recipe can be veganized by using a plant-based  butter and cheese like a Vegan Goat or Gorgonzola.
  2. The pancetta is optional or can be replaced with a vegan bacon alternative.
  3. If fresh figs are out of season, consider using shredded Jackfruit in replacement.  Be sure to rinse, soak, boil and strain the jackfruit before adding to pizza.  
  4. The crust can also be substituted with cauliflower pizza dough..
