GRILLED ISLAND SCALLOPS

(Serves 4)

INGREDIENTS:

  • 1lb of fresh jumbo scallops (dry)
  • 1 cup Island Heat sauce
  • 1 teaspoon granulated garlic
  • 3 tablespoon olive oil
  • sea salt and black pepper to taste
  • handful fresh parsley or edible flowers (for garnish)


DIRECTIONS:

  1. Heat oil in a large skillet.
  2. Season scallops with granulated garlic and salt and pepper to taste.
  3. Once oil is hot in the skillet, add the scallops.  Leave room to prevent crowding.  Allow scallops to sear on one side before flipping, about 3-5 minutes.
  4. Add Island heat sauce to base of skillet and allow sauce to heat up, about 3 minutes.
  5. Serve as an appetizer or over a bed of noodles or rice.  Garnish with chopped parsley or edible flowers.

M.I.L. Notes:

  1. This recipe can be veganized using a plant-based seafood option such as King Oyster Mushrooms cut into scallop size.
  2. If your scallops were previously frozen or have a lot of water inside, try to strain the excess water out before sautéing and it will allow them to brown quicker.
