Season chicken using 2 tablespoons of the olive oil, garlic, cayenne, lime juice salt and pepper to taste. Allow the chicken to marinate for at least 2 hours or overnight in the refrigerator.
Heat 2 tablespoons or more of olive oil in a skillet on medium-high heat.
Sear chicken on all sides for about 5 minutes to create a golden crust on the outside.
Heat oven to 350 degrees.
Transfer chicken and its juices to a baking dish and cover with island heat sauce. Cover the dish with a lid or aluminum foil and place in heated oven for 45 minutes to 1 hour until the juice of the chicken run clear.
Serve over rice and garnish with chopped cilantro.
This recipe can be veganized using a chicken alternative. Season a plant-based alternative like firm tofu or tempeh using the spices listed then follow the rest of the recipe directions.
Add more island heat sauce to make this recipe even more decadent. Additional veggies like onions and bell peppers also make a great addition.
You can also replace the chicken with any seafood option, but remember to cut the cooking time because seafood takes less time to cook through.
