RED SALMON SIMMER

(Serves 4)

INGREDIENTS:

  • 4 (6oz) pieces of salmon
  • 1 cup Red Red sauce
  • 1/2 Cup chopped grape tomatoes
  • handful of fresh chopped parsley
  • 2 tablespoons olive oil
  • 1 teaspoon granulated garlic
  • Sea salt & black pepper to taste


DIRECTIONS:

  1. Heat oven on 350 degree while preparing meal.
  2. Season salmon filets with granulated garlic and salt and pepper to taste.  Set aside.
  3. Heat olive oil in cast iron skillet  on high
  4. Add salmon filets to hot skillet and sear each pieces on each side for about 2 minutes.  Avoid cooking throughout.  The goal is just to get a sear on the outside.  Remove skillet from heat.
  5. Coat salmon with red red sauce and place in oven to cook throughout....about 12 -15 minutes.
  6. Toss chopped tomatoes with chopped parsley and sprinkle atop salmon before serving.

M.I.L. Notes:

  1. This dish can be veganized using banana blossoms in replacement for the salmon.
  2. Other seafood options like cod, shrimp or seabass can also be used to replace the salmon
  3. Serve this dish over rice or any grain and allow the red red sauce to soak into it.  Also delicious over a bed of grilled asparagus.
