ROASTED RED RED CHICKEN

(Serves 4-6)

INGREDIENTS:

  • 3 pounds of chicken on the bone
  • 2 Cups of Red Red Sauce
  • 1 tablespoons granulated garlic
  • 1 teaspoon thyme
  • 1/2 teaspoon paprika
  • Sea Salt and black pepper to taste


DIRECTIONS:


  1. Score the chicken skin with tiny cut using a sharp knife to allow the seasoning to seek inside.  Season chicken with granulated garlic, thyme, paprika, salt and pepper to taste.  
  2. Add seasoned chicken to a ziplock bag and add 1 cup of the  Red Red sauce.  Toss to coat the chicken and allow it to marinate in refrigeration for at least 2 hours or overnight.
  3. Heat oven to 375 degrees.  
  4. Place chicken on a baking sheet.  Avoid crowding the pot.  Allow space between each piece. Cook for 20 minutes.
  5. Coat the chicken with last cup of Red Red sauce. Continue to bake the chicken  for another 30 minutes until fully cooked.
  6. Serve chicken with your favorite veggies or starch

M.I.L. Notes:

  1. This  recipe can also be veganized by using  King Oyster Mushrooms.  Reduce cooking time because mushrooms require less cooking time.
  2. The chicken or mushrooms can also be cooked in an air-fryer to create a crispy version of this recipe.  Delicious!
