spicy Soba noodles w/Sauteed veggies

(Serves 4)

INGREDIENTS:

  • 10 ounce packages of soba noodles
  • 1 Cup Night Sauce
  • 1/2 cup water or oat-milk
  • 2 Cups of Broccoli florets
  • 1 Red Bell Pepper
  • 1/2 Red Onion
  • 2 portobello mushrooms
  • 1/2 Cup of Edamame 
  • 1 Carrot or  parsnip (sliced thinly)
  • 3 tablespoons of olive oil
  • 4 Sprigs of Green Onion  (garnish)


DIRECTIONS:

  1. Prep soba noodles according to package instructions, drain, then set aside.  
  2. In a wok, add oil and sautee veggies on medium-high heat until al‘dente, about 5-8 minutes.
  3. In a separate sauce pan, dilute 1 cup of Night Sauce with 1/2 cup water.  Stir on medium heat until sauce is smooth.
  4. Massage the Night Sauce into the soda noodles to completely coat all the noodles.
  5. Combine veggies with udon noodles and garnish with chopped green onions.  Enjoy!

M.I.L. Notes:

  1. You can substitute any of the veggies for a combination of your favorite.
  2. You can substitute the noodles with Udon or ramen noodles.
  3. You can substitute the oat-milk with any plant-based milk...avoid milk from animals.
  4. If you choose to add protein to this dish like Tofu or chicken, simply sautee it separately  and fold it in with the marinated noodles and veggies.
