Veggies w/Golden Nut Noodles

(Serves 4)

INGREDIENTS:

  • 10 ounces of prepared ramen noodles
  • 1 1/2 cup of Golden Nut Sauce
  • 1 cup water or oat milk
  • 1 Red bell pepper (julienne sliced)
  • 1 yellow bell pepper (julienne sliced)
  • 2 cups of purple cabbage slaw
  • 1 cup shredded carrots 
  • 1 cup edamame 
  • 1/4 cup chopped cilantro
  • 2 tablespoons olive oil
  • 1 teaspoon granulated garlic
  • Sea salt and black pepper to taste
  • 1/8 cup crushed peanuts (optional)


DIRECTIONS:

  1. Heat the ramen noodles according to package instruction, drain and set aside.
  2. Place a large skillet on the burner, add olive oil and heat on medium-high.
  3. Add veggies to the skillet and season with garlic and salt and pepper to taste.  Allow veggies to cook for about 5 minutes until al dente. 
  4. Using a sauce pan, heat the water on the stove at medium heat.
  5. Dilute the Golden Nut Sauce in the hot water.  Stir until sauce is smooth. 
  6. Combine the ramen noodles with the sauce.
  7. Add sauteed veggies to noodles and garnish with chopped cilantro and crushed peanuts, then  serve.

M.I.L. Notes:

  1. The ramen noodles can be substituted with any noodle variety or zucchini noodles.
  2. Substitute oat milk with any plant-based milk. Avoid using milk from animals.
  3. This recipe can also be made into a raw-food vegan meal by leaving all the veggies raw along with a raw plant-based noodle
